European perspective on poultry slaughter technology

The slaughter process as it is presently conducted in Europe is described as well as the EU regulation with respect to handling, transport, stunning, and killing of poultry. Furthermore, a description of new developments in poultry processing is described with special attention to bird handling and stunning.
